Certified Organic. 100% Jabalí (A. Convallis) from San Baltazar Guelavila. Jabaliì is a notoriously difficult agave to make into mezcal. Its complex sugars and high content of saponins generate dense foam during fermentation and distillation. In addition, Jabaliì must be distilled three times or else the spirit remains cloudy. This maguey produces exemplary mezcals, however, and Grulani’s is savory and herbal, with good minerality and a salty finish.
